Oral history interview with Manish Patel, conducted by Archival Creators Fellow Pooja Prazid.

Manish Patel was born and raised in New Orleans. He is the owner of Tava in New Orleans. He followed his father’s footsteps to become a chef, and wanted to bring dosas into the local cuisine scene. His cheese dosa was described by Bon Appetit as “drunk food for the gods” and “one of the best new restaurant dishes of 2023” in America.
